Golden Pumpkin Protein Waffles

Makes: 3 regular sized waffles

Ingredients:

  • 1 ¾ cup gluten free all-purpose flour blend
  • ½ cup oat flour (or just finely ground rolled oats)
  • 1-2 scoops of Organifi Vanilla Complete Protein
  • 1 scoop Organifi Gold Pumpkin Spice
  • 1 ½ tsp baking powder
  • Pinch of sea salt
  • 1 tbsp flax seed
  • ½ tsp cinnamon
  • 1 ¼ cup unsweetened almond milk
  • 1 tsp apple cider vinegar
  • ¼ cup melted coconut oil
  • ¼ cup maple syrup (or honey)
  • ½ cup canned pumpkin
  • 1 tsp vanilla extract

Suggested toppings: chopped walnuts & finely chopped dark chocolate

Instructions: Mix all ingredients in a bowl until just combined. Pour batter on a heated, greased waffle iron until cooked.

Along with enjoying this recipe for breakfast, it would also make a great post-workout meal or even dinner if you're a breakfast-for-dinner sort of person.
