Organifi Pesto Pasta (Made With Zucchini Noodles!)

Nothing like a good warm pesto over zucchini noodles after a long day of work! Pesto is such a great sauce to use in sandwiches, over pasta, as a dip or in wraps. In this recipe we pour a generous amount over freshly spiralized zucchini noodles.

If you’ve never had zucchini noodles, you might be a little skeptical. Will they taste good? Will I miss regular noodles? Once you get the hang of the spiralizer, we are confident you will love zucchini in the place of noodles! Not only are they WAY lower in calories than wheat, but zucchini are also jam packed with minerals like magnesium, potassium, copper and phosphorus. They even have some omega-3 fatty acids!

Don’t have a spiralizer? All's not lost! Simple slice the zucchini as thin as you can and steam for a minute or two so it turns soft.

Organifi Pesto Pasta

Ingredients:

  • ¼ cup diced onion
  • 1 scoop Organifi Green Juice
  • Juice from 1 lemon or lime
  • 1 tbsp coconut oil
  • ½ cup cashew butter
  • 4 zucchini
  • 1 bunch basil
  • Sea salt and pepper

Instructions:

1. In a food processor, add the onions, Organifi Green Juice, basil, coconut oil, cashew butter and lime.
2. Process until smooth.
3. Season with salt and pepper to taste.
4. Make zucchini noodles using a spiralizer.
5. Pour sauce over zucchini noodles
6. Enjoy!
