Do you enjoy gardening, but are worried that you are late in the game?

Don’t worry. There are plenty of vegetables you can still plant mid-summer. Here are 3 of the most delicious ones:

Beets

Beets are delicious sweet root vegetables that can brighten up any fall table. While you may think of beets as being bright purple, they come in a variety of colors from deep purple-red to golden yellow. Beets are abundant in phytonutrients and anti-inflammatory properties. They are full of detoxification benefits, especially when it comes to liver detox.

The ideal time for planting beets varies from mid-to-late summer and harvest goes beyond the last frost date.

Carrots

Carrots are another type of sweet root veggie that also come in various colors, including the well-known orange, but also purple, yellow and white. Carrots are high in beta carotene and vitamin A and are great for your eyes and detoxification.

The ideal planting time is during the summer and harvesting goes throughout the fall. Make sure you water your carrots well if it is a dry summer.

Kale

Kale is a delicious leafy green that has gained popularity over the past several years because of its powerful remedying properties. Kale is filled with all kinds of vitamins and minerals. In fact, eating just one cup of cooked kale can help you meet 100% of your vitamin A and 1000% of you vitamin K needs.
