Fresh Tomato Salsa
- 4 plum tomatoes, cut into ¼ inch pieces
- 1 small jalapeno, seeded, finely chopped
- 1 poblano pepper, seeded, finely chopped
- 2 tbsp fresh lime juice
- ¼ tsp Himalayan salt
- Pinch of black pepper
- 2 tbsp chopped fresh cilantro
- 2 tbsp chopped fresh parsley

Instructions: Toss all ingredients together in a medium bowl. Eat it with cucumber slices, carrot sticks, celery sticks, or raw crackers. Top your baked potatoes or steamed veggies with it. Use it on your tacos - use lettuce or collard greens instead of tortillas.
