What should be a time of joy and celebration becomes a battle between myself and my cravings. Keeping portions controlled, plugging my nose to avoid the savory smells while cooking in the kitchen and turning down treat after treat. It’s exhausting and hardly successful. I’m sure you know the story.

But wait! I have good news for you! Or good tidings as the case may be.

 

I have for you a classic holiday recipe that will not only satisfy your sweet tooth and season spirit, but that is also totally healthy!  

Pumpkin Pie Pudding

What says fall more than pumpkin pie? This Pumpkin Pie Pudding is just the thing for a family dinner, a holiday party, or a backup to keep on hand for when the cravings hit.

  • 1 2/3 cup unsweetened rice milk (or almond milk)

  1. Blend all ingredients together in a blender or mixer.
  2. Pour into individual serving glasses.
  3. Refrigerate for a few hours until pudding firms up.
