Mother's Day Gluten Free Chocolate Waffles For Breakfast In Bed

These waffles are DELICIOUS. The original recipe comes from Bob’s Red Mill website. I only slightly altered the recipe to fit my preferences and they turned out absolutely amazing! I saved these bad boys to share with you just before Mother’s Day because I think they are perfect for the occasion.

These gluten-free waffles also happen to be CHOCOLATE. I can’t think of a better way to wake up Mom on a Sunday morning than with a hot plate of chocolate waffles covered in fresh berries and a little maple syrup.

After the recipe I’ve also put together some great Mother’s Day gift ideas for those of you still trying to figure out the perfect way to express appreciation to your mom.

Gluten Free Chocolate Waffles

Inspiration: Bob’s Red Mill

Serves 4

Ingredients:

  • 1 cup Gluten Free All Purpose Baking Flour
  • ½ cup brown flax seeds meal
  • ½ cup brown rice flour
  • 1 tsp arrowroot starch
  • ½ tsp baking soda
  • 2 tsp baking powder
  • 1 serving chocolate Organifi Complete Protein
  • ⅓ cup cane sugar
  • Salt to taste
  • ⅓ cup melted butter or coconut oil
  • 3 large eggs
  • 1 cup almond milk

Instructions:

1. Preheat waffle iron.
2. Mix the Gluten Free All Purpose Flour, flaxseed meal, brown rice flour, arrowroot starch, baking soda, baking powder, cocoa powder, sugar and salt together well in a mixing bowl.
3. Beat the eggs together in a separate bowl, then add milk and butter (or coconut oil). Blend wet ingredients into the dry mixture, mix together well (if it's too dry you can add a bit more milk).
4. Pour the batter into your preheated waffle iron, according to the waffle iron directions.
5. Serve with butter and syrup (or raw honey), or hot berries, or dark chocolate! Depending on how decadent you're feeling! Enjoy!
