Tomato

How To Make Rainbow Salsa

Ingredients:

RED

  • 3 Roma tomatoes, cored and diced
  • 1 red bell pepper, cored and diced

GREEN

  • 2 Jalapeno peppers, seeded and diced
  • 1 cup fresh cilantro, chopped
  • 1 avocado, cubed

ORANGE

  • 1 orange bell pepper, cored and diced

YELLOW

  • 1 yellow bell pepper, cored and diced
  • 1 cup fresh pineapple, diced

“BLUE”

  • 1 can black beans, drained and rinsed (15 ounces)

PURPLE

  • ⅔ cup chopped red onion

FLAVOR

  • 2 tbsp lime juice, freshly squeezed
  • ½ tsp sea salt
  • ½ tsp garlic powder
  • ½ tsp cumin
  • Cayenne pepper, to taste

Instructions:

1. In a large bowl, mix the tomatoes, jalapeno, avocado, bell peppers, beans, corn, cilantro and onion.
2. To make the flavoring: in a small bowl, whisk together the lime juice, garlic, cumin, salt and cayenne.
  • Pour the juice into the large bowl of ingredients.
  • Toss until everything is combined.

You definitely won’t find me high above the chimney top if this Rainbow Salsa is in sight.
