Pomegranate Watermelon Salad


  • 3 cups of cubed watermelon
  • 1 cup pomegranate seeds
  • 3 tbsp fresh mint leaves (sliced thinly)
  • Juice of 1 lime

Options add-ins:

  • Feta cheese
  • Balsamic vinegar


1. Prepare your pomegranate seeds by gently opening the pomegranate and removing them.
2. In a large bowl, place the watermelon, pomegranate seeds and mint.
    • Cover the bowl with a lid or wrap and place it in the refrigerator for 2-3 hours.
    3. To Serve:
      • Remove from the refrigerator and pour the lime juice (and additional ingredients if using) into the bowl.
      • Toss carefully to mix.

      This chilled salad is the perfect choice on a hot summer day.
